"Go Mai" (五枚) literally means "five layers" or "five sheets". It is a combination of go (the number five) and -mai (the counter for flat, thin objects like paper, plates, or metal)., consisting of a hard, high-carbon steel core sandwiched between two cladding layers on each side, often featuring a nickel interlayer to prevent carbon migration. The technique offers superior edge retention and toughness compared to traditional three-layer (San Mai) techniques, often with a distinct visual contrast.
